A Month of Unprocessed Snacks



Towards the middle of February, my husband and I decided to embark on a challenge of feeding our kids unprocessed snacks for a month. I had gotten into a routine of buying pretzels, occasionally goldfish, and a few other processed snacks for their lunches. It really wasn't too bad but the kids seem to go crazy when we loosen the reins a little bit and all they want is junk.

I enjoy a good challenge, whether it be for my own dietary guidelines or for the challenge of making sure my little ones are getting the right nutrition. We have allowed a few exceptions to the rule of unprocessed food which consisted of :

bread
lunchmeat
store bought hummus
string cheese

Their lunches consist of:
fruit
a sandwich
hummus and carrots/broccoli
a rotating snack

I started rotating the snack option that we have in the house, just to mix it up and keep things exciting. Each snack should last you about a week. You may run out early because these are all so yummy and have been kid and husband approved so, feel free to double the recipes.

Rotating Weekly Snacks

Week 1: Nut'Nola

*this recipe calls for pepitas, which are small green pumpkin seeds. When I make this again, I will leave those out. They give a very distinct taste which I'm not so sure I cared for. I eat them a lot in other things but in this recipe I was so sure about them. However, my kids totally ate them, so you can't really go wrong.

Week 2: Nut Bars

*These were delish and I couldn't wait for them to finishing chilling before digging in. Keep them stored in the refrigerator or freezer for best results. You also can just roll these into balls and keep them in the freezer. Keep in mind that the coconut oil gives a subtle but distinct taste here. If you want to substitute something in place of the coconut oil, it looks like melted butter or perhaps olive oil would work.

Week 3: Life Changing Crackers (I do the rosemary and garlic batch) These are amazing with eggs, chicken salad, or by themselves.

Week 4: Air popped popcorn with nothing added
We have this air popper and it works great. We have had it for years and use it several times a week. We buy popcorn kernels in bulk and just toss them in the air popper when we need to make a batch of popcorn. It's a staple in our house :)
