I'm actually on week 4 of my Whole 30 challenge right now but I lost my notepad that had all of my detailed notes from week 2. I finally found it so here I am, backtracking a little bit. Week 2 was so much better than week 1 in terms of having a rhythm in place. I spent the weekend doing some research and planning some meals and during week 2 things just fell right into place and I wasn't nearly as hungry as I was in week 1. I ate more filling lunches and breakfasts and that helped tremendously. I also knew exactly what we were having for dinner, so when asked "what's for dinner?" I knew exactly how to respond. I realized that you can cook prosciutto in the microwave for 1 minute and it turns crispy and tastes just like bacon. It was so easy and not nearly as messy as bacon. I used this trick several times throughout week 2. During week 2, I discovered that I could have some frozen berries, cinnamon and pecans as my little nighttime snack. ...

A Month of Unprocessed Snacks

Towards the middle of February, my husband and I decided to embark on a challenge of feeding our kids unprocessed snacks for a month. I had gotten into a routine of buying pretzels, occasionally goldfish, and a few other processed snacks for their lunches. It really wasn't too bad but the kids seem to go crazy when we loosen the reins a little bit and all they want is junk. I enjoy a good challenge, whether it be for my own dietary guidelines or for the challenge of making sure my little ones are getting the right nutrition. We have allowed a few exceptions to the rule of unprocessed food which consisted of : bread lunchmeat store bought hummus string cheese Their lunches consist of: fruit a sandwich hummus and carrots/broccoli a rotating snack I started rotating the snack option that we have in the house, just to mix it up and keep things exciting. Whole 30: Week 3--Finding Your Rhythm

A full month is really what it takes to change habits and have enough time to settle in to new routines and establish rhythm and go-to recipes. This week my routines have been my lifesavers as we had a birthday in our family. With all the birthday planning and executing, I'm so glad that I had some routines and go-to meals established so that I didn't have to think about what I could and could not eat. Week 3 of Whole 30 turned out to actually be pretty hard. I'm sure the fact that my youngest turned 5 was one main factor in why this week was harder. Of course part of a birthday includes lots of yummy treats and splurges. The boys had pizza that made my mouth water and a delicious, well delicious looking, chocolate cake with chocolate fudge frosting. I held strong and had steamed vegetables and cauliflower falafel for dinner.
